The protein in whey can be adjusted to the right concentration and it can be removed from the whey by the process of ultrafiltration. The functional characteristics don’t change much in that process.

The end results of this process are called, whey protein concentrates (WPC). Because Whey protein contains all 9 essential amino acids it is called a complete protein. With a high content of these amino acids, whey proteins have a nutritional value superior to casein and other food/feed proteins.
They are low in lactose content.
