Milk for industrial use
After the cows are being milked, the milk has to be cooled directly to 4 degrees in a cooling tank. The milk is collected by the dairy with a food tanker within 3 days after milking. When entering the dairy factory, milk has to undergo heat treatment to kill bacteria and inactivate some enzymes. Raw milk is the basic commodity, which can be used to produce any dairy product.
Milk concentrates for industrial use
Skimmed milk concentrate
Skimmed milk concentrate is obtained after removal of water from the skimmed milk. Water can be removed by either reverse osmosis or evaporation. Evaporation means the removal of water by heating. Reverse osmosis uses a membrane to split the water from the dry matter. SMC usually contains around 36% dry matter and is used to produce skimmed milk powder, ice cream and yoghurt.
Whey concentrate for industrial use
Whey concentrate is a result of concentrating liquid whey (6% dry matter) by evaporation or reverse osmosis. Liquid whey is a by-product of cheese production. After adding the rennet to milk, the milk splits into cheese curd and whey. Whey concentrate usually contains 20% or 60% dry matter. Applications can be found in whey powder production for food or feed, ice cream production (sweetener), sports nutrition or pharmaceutical industry.
Cream for industrial use
Pasteurized cream is obtained after skimming of the milk. Pasteurized cream contains around 40% fat and can be used for all kinds of fat applications like butter, full fat yoghurt or desert, ice cream etc.
