Cheese

Cheese is a dairy product derived from milk that is produced in a wide range of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, raw or pasteurized, usually the milk of cows, buffalo, goats, or sheep. Most cheeses melt at cooking temperature.

The four steps in manufacturing are:

  • Standardization of the pasteurized or raw milk for any type cheese
  • Coagulation, transformation from liquid state to coagulated state
  • Drainage
  • Refining after drainage depending type of cheese
