Acid whey powder is obtained by drying fresh whey derived from the manufacture of soft white cheeses and acid casein manufacturing which has undergone pasteurization and contains no preservatives.

The lactose content of acid whey powder is lower than sweet whey powder, its acid number is higher, a more acid taste. Lactose content around 65%, acidity around 4,5ph.
