Whey Derivatives
Whey powders are the result of spray drying pasteurized cheese whey. The first step is to concentrate the pasteurized whey. The value of Whey is its high nutritional value.
Whey itself is the liquid remaining after milk has been curdled and strained. It is a byproduct of the manufacturing of cheese. Sweet whey is produced during the manufacturing of rennet types of hard/semi hard cheeses like swiss or cheddar and Gouda/Edam. Acid whey is produced during the manufacturing of acid types of dairy products like cottage cheese, yogurt or acid casein production.

Sweet whey powder

Acid whey powder
Spray dried, lactose content is lower than sweet whey powder. Its acid number is higher. Is has a more acidic taste than sweet whey.
Deproteinized whey powders
The finished dry powder contains more than 80% lactose after removal of sufficient protein.
